I have endured almost every form of diet over the last fifteen years. Raw vegan, vegan, vegetarian, Atkins, low-carb, primitive, pescetarian, Mediterranean, and so on and so forth. Food has been an obsession. My body a laboratory.
Ignoring the trendy labels, a few simple rules have emerged. I prepare ~90% my own meals, even when I travel. The only way to have control over what is in your diet is to prepare it yourself. Period.
I use real food. What do I mean by this? Simple Whole Ingredients.
I do my best to minimize foods produced by industrial agriculture and factory farming. Grains and legumes, I’m looking at you.
Growing up both of my parents were very good cooks. As a farming family it was necessary. Generally my mother would do the baking and preserving, and my father would do the grilling and roasting. There was a term that Dad used to have for his cooking after we left the farm. He would call it peasant fare. Simple, humble, nourishing and delicious.
I hope that my specialty is peasant fare.
